Serves/Makes: 2 loaves

 

Ingredients:

3 eggs

½ Tsp vanilla extract

1 Tsp baking soda

1 Tsp baking powder

1 Tsp salt

1 Tsp cinnamon

¼ c molasses

¾ c walnuts (chopped)

1 c raisins

1 c shredded carrot

1 c vegetable oil

1 c and 2 Tbsp granulated sugar

1 ½ c all-purpose flour

 

Procedure:

1. Prepare the oven by preheating it to 350 degrees Fahrenheit.

2. Mix cinnamon, baking soda, baking powder, flour and salt in a large-sized mixing bowl.

3. Get another bowl. Mix eggs, oil, sugar, vanilla extract and molasses using an electric mixer. Put the shredded carrots and mix again. Then, put the walnuts and raisings and mix again but this time using your hands.

4. Transfer the flour mixture to the other ingredients. Stir the mixture until well-combined.

5. Get a loaf pan, about 8-inch. Transfer the batter to the loaf pans. Make sure the loaf pans are ungreased. Bake the batter for about an hour, or wait until they are done.
