Sara Lee’s Carrot Square Cake

Serves: 6

 

Ingredients:

1 and ¼ cup all-purpose flour

1 cup sugar

1 cup chopped walnuts

1 cup finely grated carrots

½ cup light raisins (optional)

2 teaspoon cinnamon

1 and ½ teaspoon baking powder

1 teaspoon salt

1 teaspoon vanilla

6-ounce oil

2 eggs

 

CREAM CHEESE ICING

6-ounce softened cream cheese

1 pound powdered sugar

¼ pound butter

1 tablespoon flour or cornstarch

1 tablespoon light corn syrup or pancake syrup

1 and ½ teaspoon orange extract

1 teaspoon spice island orange peel

 

Procedure:

1. Mix eggs, vanilla, oil, salt, baking powder, cinnamon, sugar and all-purpose flour using an electric mixer on moderate-high speed.

2. Blend the ingredients for about 3 minutes. Scrape down the edges of the bowl frequently while removing the beaters.

Sara Lee’s Apple Maple Cheesecake

Ingredients:

2 medium-size tart cooking apples (about 2 cups, peeled and sliced)

1 Sara Lee Original Cheesecake (thawed and sliced into 6 wedges)

1/3 c maple-flavored syrup

1 c walnuts (chopped)

1 Tbsp light brown sugar

2 Tbsp margarine or butter

1 Tsp ground cinnamon

1 Tsp cornstarch

Slivered apple (garnish)

 

Procedure:

1. Melt the butter or margarine in a large skillet over moderate heat.

2. Put the sliced apples and cooked it on heated margarine/butter, occasionally stirring it, for about 5 minutes or until the apples are tender.
