Sara Lee’s Carrot Square Cake
Serves: 6
Ingredients:
1 and ¼ cup all-purpose flour
1 cup sugar
1 cup chopped walnuts
1 cup finely grated carrots
½ cup light raisins (optional)
2 teaspoon cinnamon
1 and ½ teaspoon baking powder
1 teaspoon salt
1 teaspoon vanilla
6-ounce oil
2 eggs
CREAM CHEESE ICING
6-ounce softened cream cheese
1 pound powdered sugar
¼ pound butter
1 tablespoon flour or cornstarch
1 tablespoon light corn syrup or pancake syrup
1 and ½ teaspoon orange extract
1 teaspoon spice island orange peel
Procedure:
1. Mix eggs, vanilla, oil, salt, baking powder, cinnamon, sugar and all-purpose flour using an electric mixer on moderate-high speed.
2. Blend the ingredients for about 3 minutes. Scrape down the edges of the bowl frequently while removing the beaters.
