Serves: 1 dip

 

Ingredients:

Roux (to thicken)

½ c diced onion

½ c green onion (chopped)

½ c parsley (chopped)

1 c mozzarella (shredded)

2 c heavy cream

2 c chicken stock

2 c artichokes (chopped)

2 c spinach (chopped)

2 Tsp lea and perrins

1 Tsp garlic (minced)

1 ounce olive oil

Salt and pepper to taste


Procedure:

1. Put olive in a sauce pan and heat it.

 

Serves/Makes: 1 quart


Ingredients:

3 Tsp salt

1 Tsp black pepper

1 Tsp paprika

3 pounds pork ribs (small)

 

Procedure:

1. Flavor the ribs using the mixture listed above.

½ c whipped butter

4 garnet yams

3 Tbsp granulated sugar

1 ½ Tsp cinnamon

 

Procedure:

1. Prepare the oven by preheating it to 400 degrees Fahrenheit.

Serves: Good for 6 Tacos

 

Ingredients:

Fresh lime juice

3 Tbsp salad oil

6 Tbsp ground dried California or New Mexico chilies

½ Tsp garlic powder

½ Tsp ground cumin

½ Tsp pepper

½ Tsp cayenne

About ½ Tsp salt

About ½ Tsp pepper

1 dried bay leaf (cut into pieces)

Cabbage (shredded)

2 whole cloves

1 lb skinned, boned and firm-flesh fish (like mahi mahi, halibut or rock fish)

 

Procedure:

1. Get a large bowl. Combine cayenne, bay leaf, ground dried chilies, ½ Tsp salt, pepper, garlic powder, cloves, oil and cumin.

2. Wash the fish and pat to dry. Put the fish into the bowl with the dry ingredients. Turn the fish until it is coated with the marinade. Cover it and chill for not less than an hour or up to 24 hours. Make sure you mix it a couple of times.

Ingredients:

Chili cream sauce

¼ Tsp baking powder

½ Tsp chili powder

½ Tsp salt

½ Tsp garlic powder

5 Tbsp all-purpose flour

1/3 c cornstarch

1/3 c flour (will be used for dredging)

4 c vegetable oil (will be used for deep frying)

½ c cold water

1 lg. spring sweet onion (no less than 4” across)

A pinch of cayenne pepper, black pepper and paprika

 

Procedure:

1. Get a medium-sized bowl and combine baking powder, seasonings, cornstarch and flour. Gradually beat in the water. Whip the mixture using a wire whisk until mixture turns smooth then set aside.

1 can tomato sauce (8 oz)

1 can kidney beans with liquid (15 oz)

1 lb ground beef

1 c water

 

Garnish

Whole jalapeno chili peppers (canned)

Diced onion

Cheddar cheese (grated)

 

Procedure:

1. Get a large sauce pan and preheat it over medium heat. Cook the ground beef until it turns brown. Then, drain the fat.

1 teaspoon chili powder

1 teaspoon sugar

¼ teaspoon cayenne powder

¼ teaspoon salt

1 teaspoon pickled jalapeno slices (chopped)

1 teaspoon wine vinegar or cider

¼ cup red onion (diced)

2 cloves of minced garlic

1 can black beans (15 ounce)

Ingredients:

2 pounds of head on shrimp

2 ounce barbecue sauce

2 ounce Lea and Perrin

½ ounce cracked black pepper

1 ounce garlic

½ c. parsley (chopped)

½ c. green onions

4 bay leaves

½ pound butter

A pinch of salt

A pinch of cayenne pepper

Lemon juice (from 3 lemons)

 

Procedure:

1. Preheat a deep pan.

Bleu Cheese Dressing

1/8 Tsp salt

1/8 Tsp onion garlic powder

¼ Tsp garlic powder

¼ Tsp ground black pepper

½ Tsp sugar

¾ c mayonnaise

¼ c crumbled bleu cheese

½ c buttermilk

 

1 c crumbled bleu cheese

1 c diced tomato (from a large tomato

1 head iceberg lettuce

 

Procedure:

1. Put all the bleu cheese dressing ingredients in a medium-sized bowl and mix it using an electric mixer.
