Hard Rock Cafe Tupelo Style Chicken

One of the most popular restaurants in the world, Hard Rock Café pays respect to the famous Elvis Presley’s birthplace by creating a chicken finger appetizer with two different delicious dipping sauces. Hard Rock Café made a good choice by naming the dish after Elvis’ birthplace instead of the King’s name. It would be a little bit odd to name it “Elvis Style Chicken” since it would sound like a concoction with peanut butter, bananas and bacon grease in it.

Ingredients:

4-6 c. vegetable oil

Honey Mustard Dipping Sauce

A pinch of paprika

1 ½ Tsp. prepared mustard

2 Tbsp. Grey Poupon Dijon mustart

1 lb. chicken breast fillets

1 Tsp. salt

Hard Rock Cafe Pig Sandwich

Try taking a large bite from Hard Rock Café Pig Sandwich. With just one bite, you’ll instantly know why Pig Sandwich is one of the most famous dishes at this popular restaurant chain. Based on the menu, the pork used in the recipe is hickory smoked for about 10 long hours. But we all know we can’t wait that long. This is why we’re going to reduce the cooking time to just 4 hours with the use of covered grilled and cautiously arranged charcoals. Just put some hickory chips (the wet ones) on top of the hot charcoal. Make sure you arrange the hickory chips around the grill inside edges then begin the smoking. If you have a smoker, you can use that as well and proceed with smoking the pork for full 10 hours, just like the original version. However, by the time you finish making the sandwiches, there’s a great chance we already fell asleep in the couch. Oh, don’t forget to marinate the cabbage at least 24 hours before making the sandwiches.

Serves: 8 sandwiches

Ingredients:

Marinated Cabbage

4 c. cabbage (thinly sliced)

2 Tbsp. white vinegar

1 Tbsp. granulated sugar

4 c. hickory smoking chips

Spice Rub

¼ Tsp. cayenne

½ Tsp. thyme

2 Tsp. cracked black pepper

2 Tbsp. kosher salt

½ Tsp. ground sage

½ Tsp. paprika

½ Tsp. onion powder

Vegetable oil

1 (about 3-4 lbs) pork loin roast, boneless

Sauce

¼ Tsp. coarse ground black pepper

¼ Tsp. salt

1 c. white vinegar

2 15-oz cans of tomato puree

½ Tsp liquid hickory smoke

2 Tbsp. vegetable oil

¾ c. brown sugar

½ onion powder

1 minced clove garlic

8 Kaiser Rolls

Procedure:

1. As mentioned, you should marinate the cabbage at least 24 hours before making the sandwiches. Like the Hard Rock Café’s famous coleslaw, it will take some time before the flavors will fully develop inside the refrigerator. To marinate the cabbage, mix sugar and vinegar in a medium-sized bowl. Put in the cabbage, toss it well then cover it. Store the marinated cabbage in the fridge for about 24 hours before making the sandwiches.
