El Torito Sweet Corn Cake

You can get Masa Harina in most local supermarkets. You can easily find it on the flour section of the supermarket bagged like flour. The Masa Harina is the type of flour to be used to make the corn tortillas. You can easily double this recipe. There are two methods provided here. Either method can provide you with a tasty sweet corn cake. However, the second method is the moist one you will get at El Torito.

 

Serves: 10 to 12 small servings

 

Ingredients:

¼ Tsp. Baking Powder

¼ Tsp. Salt

2 Tbs. Shortening

3 Tbs. Cold Water

½ C. Masa Harina

¼ C. Margarine or Butter

2 Tbs. Whipping Cream

¼ C. sugar

3 Tbs. Cornmeal

10 oz. Corn Kernels

 

Procedure:

1. In a mixer bowl, put the shortening and the butter. Whip the two until they are soft. Keep on whipping until the mixture turns creamy and fluffy. Then, put the Harina Masa slowly while you are whipping it. Then gradually put water on the mixture then mix well.
