Do you have one of those amazing hand blenders with you? The kind of blender you will find in infomercials during the wee hours? Well, although, you may find the infomercial annoying, you will definitely find the hand blender very useful for this recipe, especially because this recipe needs the peas to be split so you can smash the peas into a smooth consistency like what California Pizza Kitchen restaurant do. However, if you don’t own a hand blender, you can just simply use a typical blender. This soup from California Pizza Kitchen is very delicious. Plus, it’s also low-fat! The barley even offers that remarkable chunky consistency that also adds flavor to the soup that you will not normally find in normal pea soups.

 

Serves: 8

 

Ingredients:

 

 

2 medium carrots (about 1 cup, diced)

1 teaspoon granulated sugar

1/4 teaspoon dried parsley

1 teaspoon salt

dash dried thyme

2 teaspoons lemon juice

6 cups water

1/3 cup onion (minced)

1/4 teaspoon white pepper

6 cups water

1 large clove garlic (minced)

1/2 cup barley

4 cups of chicken broth (2 14.5 ounce cans)

1/2 stalk celery (about ¼ cup, diced)

2 cups split peas

 

Garnish

chopped green onion

 

 

Procedure:

 

1. Prepare the peas by rinsing, draining and splitting them. Afterwards, put them in a large pot containing 6 cups of water, garlic, pepper, thyme, sugar, salt, onion, chicken broth and parsley. Bring the mixture to a boil. Once boiling, minimize the heat and allow the mixture to simmer for about 1 hour and 15 minutes or wait for the peas to soften.
