Bennigan’s Ultimate Baked Potato Soup

Serving Size: 4

 

Ingredients:

 

1 can chicken broth (14 and a half ounce)

1 tablespoon margarine or stick butter

1 teaspoon of salt

¼ teaspoon of pepper

1 1/1 cup of onions (finely chopped)

3 cups of milk

2 tablespoon of garlic (minced)

3 pounds of all-purpose potatoes (pierced and scrubbed in different areas)

 

Toppings:

 

Crumbled bacon

Shredded cheddar cheese

Chopped scallions

Procedure:

 

1. Preheat the oven to 400 degrees Fahrenheit.

2. Bake the potatoes for about an hour or until the potatoes are tender when pricked.

Bennigan’s Smothered Chicken

Serves/Makes:   4

 

Ingredients:

 

4 Skinless and Boneless Chicken Breasts (Unfrozen)

1 teaspoon hickory smoke flavor

4 to 8 slices provolone cheese (based on preference)

1 cup mushrooms (sliced

4 slices bacon (cooked)

3 tablespoon margarine or butter

1 cup onions (sliced)
Chicken Marinade

 

1/4 cup white cooking wine

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 cup vegetable oil

1 teaspoon basil leaves

2 tablespoon vinegar

3 tablespoon hickory smoke flavoring

1 tablespoon garlic powder

 

Mix all the ingredients in a mixing bowl. Marinade the meat in a plastic bag or covered bowl for about two hours.

 

Procedure:

 

1. Marinate the chicken meat as stated above.

2. While waiting for the chicken, prepare other ingredients (cook the bacon, slice the mushrooms and onions).

3. After slicing the onions and mushrooms, sauté the ingredients using butter as oil. Also, add the hickory smoke flavor. Sauté the ingredients until the onions turns transparent (not brown) and the mushrooms becomes tender. This usually takes about 3 to 5 minutes.

4. After 2 hours, take the chicken out off the marinade.

5. Grill the chicken for approximately 10 minutes. Make sure not to overcook it.

6. While waiting for the chicken to get cooked, preheat your oven on broil.

7. Once the chicken is ready, take it off the grill and put it in a baking dish. Use a shallow dish.

8. Cover each chicken piece with a strip of cooked bacon, provolone cheese and the sautéed mushrooms and onions.

9. Broil the covered chicken until the cheese turns bubbly. This usually takes about 3 to 5 minutes as well.

 

Oven instructions:

 

1. Preheat the oven on broil.

2. Broil the chicken for at least 10 minutes. Make sure the chicken is 5 to 7 inches from the broiler element.

Bennigan’s Potato Wedges

Serves: 4

Ingredients:

 

½ cup sour cream

½ cup Colby Cheese (Shredded)

1 bunch green onions

4 tablespoon Oscar Meyer Bacon Bits

4 medium size potatoes

 

Procedure:

 

1. Preheat the oven at 350 degrees Fahrenheit.

2. Prepare the potatoes by washing it thoroughly and scoring them using a knife.

3. Bake the potatoes for about an hour.

4. Take out the potatoes from the oven and let them cool.

5. After the potatoes cool down, slice the potatoes in half. Scrape the “meat” out of the potatoes. When you do this, make sure that you leave at least a quarter inch of potato meat on their skins.

6. Get your Pam cooking spray and spray some in a baking dish. Then, put the scooped meat potatoes in the baking dish.

7. Sprinkle some bacon and cheese on the potatoes.

8. Bake the potatoes again at 350 degrees F for about five to ten minutes, or just enough time for the cheese to melt.

9. Take the baked potatoes off the oven. Get your green onions and remove its top. Sprinkle the green onions onto the potatoes.

10. Serve this dish with the sour cream.

Bennigan’s Monte Cristo

Serves: 2-3

 

Ingredients:

3 Slices Cooked Turkey
3 Slices Swiss Cheese
9 Slices Wheat Bread
3 Slices Cooked Ham
3 Slices American Cheese

 

Batter
1 Tbs. Baking Powder
1 – 1 1/4 C. Water
1 tsp. Sugar
1/2 tsp. Salt
1 1/2 C. Flour
1 Egg
Vegetable Oil (for deep frying)

Procedure:

1. Put the Swiss cheese and turkey on a single slice of bread while the American cheese and ham on a different slice. Put another slice of bread in between the two open-faced sandwiches making a triple-decker sandwich. Secure the triple-decker by placing toothpicks at the corner part of the sandwich.

Bennigan’s Meatloaf

Serves: 2

 

Ingredients:
1 T granulated garlic

4 ounce green pepper (diced)

3 large-sized eggs (whipped)

1 pound Italian sausage (ground)

3 ¼ pound beef (ground)

1 cup parmesan cheese (grated)

1/2   Worcestershire sauce

7 1/2 oz red or yellow onions; diced

1/2 c  tomato sauce

3/8 cup tomato sauce mixed with hint of brown sugar (will be used to coat meatloaf)

 

Procedure:

 

1. Prepare the vegetables by first whisking the 3 large eggs in a mixing bowl.

2. Mix all the ingredients except for the tomato sauce that will be used for brushing/coating.

Bennigan’s Hot Bacon Dressing

Ingredients:

 

1/2 cup Honey
2 cups of water

¼ pound of finely diced red onions

½ cup of red wine vinegar

1 tablespoon Tabasco (optional)

1 ½ tablespoon cornstarch

2 tablespoon Dijon mustard

2 ounces Bacon grease

 

Procedure:

 

1. Get a saucepan and preheat the bacon grease at medium high heat.

2. Sauté the red onions until it turn black.

Bennigan’s Garlic Mashed Potatoes

Serves: 1

 

Ingredients:

3 tablespoon of Butter
1/4 cup Half and Half, or Milk
4 cloves of Roasted Garlic
1 pound Red Potatoes

 

Procedure:

1. Preheat oven at 350 degrees Fahrenheit. Bake the potatoes for approximately 20 to 30 minutes. Baking the potatoes will help get the entire flavor from the potatoes as compared to boiling them.

Bennigans Death by Chocolate

Serves: 4-6

 

Ingredients:

9 cups of softened Dutch Chocolate ice cream

9 cups of softened Rocky Road ice cream

3 packages Twix candy bars (prepare 2 cups)

3 1 and ¾ ounce of fudge packs

2 ½ cups of crust mixture (See below for recipe)

Chocolate cone dip (use only as needed)

 

Procedure:

1. Soften the Dutch Chocolate and Rocky Road ice cream for about 15 minutes.

2. Take out the fudge packs and set it aside for later use.

3. Get the Twix candy bars. Cut it into pieces in dice forms. Set it aside for later use.

Bennigan’s Buffalo Chicken Sandwich

Serves: 1 sandwich

 

Ingredients:

1/2 cup whole milk

oil for deep frying

1/2 cup all-purpose flour 1/2 teaspoon salt

1 boned and skinned chicken breast halves

1 hamburger bun 1 leaf green leaf lettuce

2 tablespoons Hot Sauce

2 slices tomato 1 slice red onion

bleu cheese salad dressing — on the side

 

Procedure:

1. Get a large frying pan or a deep fryer and heat the oil at 350 degrees Fahrenheit. Make sure not to use too much oil, use just enough to cover the whole chicken.

2. In a mid-size bowl, mix the salt and flour.

Bennigan’s Broccoli Bites

Ingredients:

1- 16 oz. box frozen chopped broccoli (drained, thawed and dried)

1 oz. all purpose flour

1/2 oz. yellow onion (diced)

2 1/2 ozs. bacon pieces

3 eggs

6 oz. Colby cheese (shredded)

6oz. Monterey jack cheese (shredded

Italian bread crumbs (as needed)

 

Procedure:

1. Drain the unfrozen broccoli by constraining it using a strainer.

2. Beat the eggs using a whisk. Stop until the eggs are thoroughly blended.
